Vegetarian Meal Ideas and Snacks for Pregnancy

fresh grapefruit, even though I can never cut it as well as my mom
popcorn with butter, cayenne pepper and sea salt
I've been eating (free range) eggs about three to four times a week. 
The patties are veggie "sausage" patties from Trader Joe's.
The (half eaten) bagel is Jalapeño Cheese with low fat, organic cream cheese. 
Lemon Sesame Kale Salad 
VitaMix Spicy Tomato Soup and grilled cheese on whole grain bread made by Scott  
blackberry, banana, strawberry, kale smoothie with chia seeds and hemp protein powder.
{funny thing about smoothies with frozen fruit is, sometimes I think they wake Sprout up because they are cold :}
barley and wild fried rice with eggs, peas, carrots, zucchini, onion 
VitaMix Spicy Tomato Soup 
microwaved rice cake with lime, tomato, black beans, hot sauce and cheese
and not microwaved rice cake with avocado, lemon and sesame seeds. 
The juice is grapefruit. My number one craving so far. 
If you have any good snacks or vegetarian meals, let me know! Also, if you have any vegetarian recipes from other cultures or countries, I'd love to try making them. Now that my morning sickness has subsided I think it'd be fun to start Foreign Food Friday up again. Does anyone have any recipes from Latin America? We really enjoyed the food we had in Peru and El Salvador and I've never tried cooking anything from there.

  1. Wow, you are eating so healthy for your baby! Seriously, this food looks amazing! We tried your Quinoa Kale Avocado Salad this week. It was a hit, and so easy. I will be making it again.

  3. In my 13th week of pregnancy I crave bagels with avocados spread atop and Cheerios with bananas. I appreciate your snack ideas! Please, keep them coming!

  4. Congrats on your bundle of joy! I always go veggie cream cheese with jalapeño bagles. I'm working on a recipie for nopal, cojata cheese and black bean enchiladas, sounds like it might be up your alley. If I get to a place I'm happy with I will send you the recipe

  5. i'm a vegetarian as well, these are all great ideas! some things i like to eat are avocado toast with veggie bacon, oatmeal with fruit, almond butter & banana smoothies, and stir fry with tofu :)

  7. So glad you posted this! I'm not yet preggos but I am a new vegetarian and my husband is convinced I am going to need to eat meat once we start trying...

  8. Oh man, I am so hungry ESPECIALLY now after seeing all of these meals. Looks liek baby is being fed really good and healthy. But then again, you always do :)
