brown rice, kale, corn, black beans, hot sauce, cheese (note: I cooked the kale in a pot with the beans, corn and a squeeze of lime) // grilled cheese with sweet potatoes and maui onions
you can never go wrong with a fresh salad (and I love this tip from Dinner a Love Story: "Without some crunch (nuts, celery, snap peas, radishes), salads can only reach half their potential" // PIE! (the cherry kind)
